Healthy(ish) honey, apple and banana flapjacks
Running a blog devoted to all things cake is a bit difficult when you’re on a diet, so I’ve constantly been trying to think of cake recipes that aren’t too unhealthy. Except the words ‘cake’ and ‘healthy’ don’t ever really go together, so flapjacks is what I came up with.
These are (relatively) healthy and nutritious, with lots of fruit and not too much bad stuff. The banana makes sure they aren’t too dry and mine were fairly gooey, so if you want to make them crunchier cook them for a little bit longer.

Fairly healthy, quick, easy scones for a cream tea
After reading this post on Peach Trees and Bumblebees about chocolate cream teas, I really wanted to try making chocolate scones. Well, that would have happened if I had remembered to add the chocolate chips, so I made normal ones instead.
Easter treats: vanilla cupcakes and cornflake cakes
I was really looking forward to making these before the Easter weekend. Originally I was going to make Nigella’s Easter egg nest cake but didn’t make it to the shops in time to get all the ingredients, so I used what was already in the cupboard.
I made a mix of vanilla cupcakes with buttercream icing and good old chocolate cornflake cakes to be a little bit different, and also because I just couldn’t decide between the two! I think the contrast when arranged together looks pretty good on my new cake stand. Although my buttercream left a lot to be desired, I definitely need a lot more practice at piping!

Sunshine Shortbread

What you will need.
Shortbread Mix
200g Plain flour
100g Icing Sugar
125g Unsalted butter…
Hummingbird Bakery black bottom cupcakes
I was given the Hummingbird Bakery recipe book when one of my old university housemates moved out and gave it to me. It was a gift from his mum as well, how sweet. So thank you Alex!
Anyway, I kept meaning to bake something from the book because literally every recipe in it looks amazing. The recipe for black bottom cupcakes caught my eye though. The combination of deeply dark chocolate cupcake and vanilla cheesecake baked into one just has to be tried.
So I gave it a go and I was more than pleased with the results. They were scrumptious!
