Pinterest is fantastic for gaining inspiration for all sorts of things. I was really looking forward to making these before the Easter weekend. Originally I was going to make Nigella’s Easter egg nest cake but didn’t make it to the shops in time to get all the ingredients, so I used what was already in the cupboard.
I made a mix of vanilla cupcakes with buttercream icing and good old chocolate cornflake cakes to be a little bit different, and also because I just couldn’t decide between the two! I think the contrast when arranged together looks pretty good on my new cake stand. Although my buttercream left a lot to be desired, I definitely need a lot more practice at piping!

Black bottom cupcakes, with added strawberries!
I was given the Hummingbird Bakery recipe book when one of my old university housemates moved out and gave it to me. It was a gift from his mum as well, how sweet. So thank you Alex!
Anyway, I kept meaning to bake something from the book because literally every recipe in it looks amazing. The recipe for black bottom cupcakes caught my eye though. The combination of deeply dark chocolate cupcake and vanilla cheesecake baked into one just has to be tried.
So I gave it a go and I was more than pleased with the results. They were scrumptious!
Yorkshire Tea is one of the most popular teas in the UK, and is even fit for royalty. (Prince Charles drinks it!) And the distinctively-designed packaging of a box of Yorkshire Tea never fails to catch my eye when browsing the tea aisle in my local supermarket.
Wouldn’t it be nice to be able to have a cupcake instantly, whenever you wanted one?
